Of all of the recipes that I’ve posted on my blog so far, only a few been veggie recipes. I recognize that vegetables don’t get people as excited as pasta or a cupcake does. Veggies are the underdogs of the food world. However, today I’m hoping to change your perception of vegetables, or more specifically, salads. This post is all about my easy 9-ingredient go-to Simple Kale Salad.

Everyone needs a great salad recipe. Salad is not something that I eat that often since, like most people, I tend to find salad boring and more of a chore than an indulgence. That all changed when I made this Simple Kale Salad.

When I went to make this salad, I started with a simple dressing of olive oil and apple cider vinegar. Next, I added some spices to the dressing and decided that the salad needed some texture. I took some sliced almonds, nutritional yeast, and salt and pulsed it all together. Lastly, I added the dressing and the pulsed mixture onto the kale along with some additional sliced almonds and it was delicious!

I’ve had this salad almost every day, sometimes twice a day, for nearly two weeks. This recipe is salty, savory, and has nice texture from the kale and almonds. Also, this salad goes great as a side along with pizza or pasta!

Simple Kale Salad

Description
This Simple Kale Salad recipe consists of just 9 ingredients and takes less than 10 minutes to make. This recipe is great to make ahead and have for lunch for the week.
Ingredients
Salad ingredients:
- 1 Pound of Kale, Stems removed and rough chopped
- 1 Cup Sliced Almonds
Dressing ingredients:
- 2/3 Cup Olive Oil
- 1/2 Cup Apple Cider Vinegar
- 2 Tbsp. Nutritional Yeast
- 1 Tbsp. Italian Seasoning
- 1 Tbsp. Red Pepper Flakes
- 2 Tsp. Minced Garlic
- 1 Tsp. Salt
Other ingredients:
- 1 Cup Sliced Almonds
- 1/4 Cup Nutritional Yeast
- 1 Tsp. Salt
Instructions
- If you’re using whole kale leaves, remove the tough stems and rough chop/tear the remaining kale leaves. Place the kale into a large bowl and massage to soften the kale. Set the bowl aside.
- In a food processor add 1 cup sliced almonds, 1/4 cup nutritional yeast, and 1 tsp. salt. Pulse until the sliced almonds are broken into small bits and all ingredients have been well incorporated.
- In a small bowl add all of the dressing ingredients and whisk thoroughly to combine.
- Add the dressing and pulsed ingredients to the bowl containing the kale along with the sliced almonds and toss to evenly coat the kale and combine all ingredients. Top with additional sliced almonds if desired and serve.
